My Sympathies « Result #2 on Oct 23, 2008, 11:50am »
I am deeply saddened and have been greiving the lost of Mary. My sympathies go out to her family, friends & loved ones. I was on my over this past Sunday to have some tea, lunch, and to drop off some fresh organic Basil from my garden when I received a call from my Mom and Dad, the Whites.
I just want to let you know that I am keeping you in my heart and in my prayers. Cup of Sunshine has been such a blessing in our lives and our family loved being regulars. It was nice to go there to get away from life and to be among family and friends. From the bottom of my heart, Thank You. We will miss you my friends.

I know we have people who read here so I'll leave this message here for those who are missing us at the shop.
It's hard for me to even find the right words or how to put them into a sentence that doesn't sound as bad as what it is.
My life partner, my best friend, my soul mate--the best thing that ever happened in my life has found her peace in the next life.
Mary J Pelly
1971-2008
The cafe is closed and will not reopen. I want to thank everyone from the bottom of my heart--and Mary's--for your support and positive energy during this past year. It was a dream come true for both of us and some of the happiest days of Mary's life were spent at the shop brewing her teas and sharing her beliefs and teachings with those of us smart enough or interested enough to lend an ear. Each of you played a part in living her passion.
Again, thank you all. Our e mail is gone as well, but if anyone wants to reach me, you can find me here.
This forum will be closed eventually, but I will more than likely keep PT's open.

House specialties
Sunshine Immune Support... Mary’s own recipe starts with a fresh from scratch, vegan-based stock... a variety of herbs and spices, all simmered together for just the perfect amount of time to unlock all the nutrients from the veggies,. It is then strained twice. Fresh, raw garlic, is pureed added at the end. There is more than a clove in the small, more than 2 cloves in the large. The body’s immune system loves the garlic’s natural reinforcement and you will love the way this delicious recipe warms right through the body straight to the soul. It can also substitute for a light lunch as it is very satisfying. sm--$3.99 lg--$5.99
Sunny Warming Ginger Tea-- Mary uses fresh ginger root cooked just the right amount of time to get all the gingery goodness. After being carefully strained, she adds a splash of orange juice, (not from concentrate), a dash of lemon juice and just enough honey and stevia to sweeten to perfection...warms you from the inside out. -- $3.99
Build Your Own Smoothie--(vegan - no sugar added) choose 1 of the following…vanilla soymilk, cocoa soymilk, organic apple juice. Choose as many as desired… banana, peach, strawberry, raspberry, mango, pineapple, blueberry. -- $4.99
What About Tea?
Tea is harvested after each flush - the sprouting of the top two leaves and bud. The top two leaves and bud are hand plucked and then processed into any of the four types of tea, which are Black, Green, Oolong, and White. Black tea is withered, fully oxidized and dried. Black tea yields a hearty, amber-colored brew. Green tea skips the oxidizing step. It is simply withered and then dried. It has a more delicate taste and is pale green / golden in color. Oolong tea, popular in China, is withered, partially oxidized, and dried. Oolong is a cross between black and green tea in color and taste. White tea is the least processed. A very rare tea from China, White tea is not oxidized or rolled, but simply withered and dried by steaming. The main chemical substances in tea are essential oils, caffeine, and polyphenols (mistakenly known by many people as tannins). The essential oils give us the aroma of the tea, the caffeine stimulates the central nervous system, and the polyphenols account for the much publicized antioxidant and anti-disease properties. Tea is not to be confused with herbal infusions. Herbal infusions are packaged like tea, infused like tea, and enjoyed like tea, however the herbs do not come from the camellia sinensis bush and therefore are not teas. Herbal infusions are made of grasses like lemongrass, barks like cinnamon, fruits like orange peel, flowers like chamomile and hibiscus, and many other botanicals. Regular infusions fail to deliver all the mineral richness locked into many common herbs. A cup of nettle brewed normally, for instance, contains only 5-10 mg of calcium, while a cup of nettle infused for 6-10 hours contains up to 500 mg of calcium.
I use only water filtered by reverse osmosis in all my teas. I have raw sugar, honey, stevia, refined sugar, as well as the dreaded pink, blue or yellow packets of artificial sweetener to sweeten to your perfection. All teas come hot, I can ice any single serving tea for $1 more , I must use twice the tea to compensate for the melting ice. Sorry, no free refills.

Cup of Sunshine Tea House & Cafe !
AUTUMN HOURS
Tuesdays -Thursdays 11 am - 8 pm
Fridays 11am - 9pm
Saturdays 12 pm - 9 pm
Sundays 12 pm - 7 pm
Owners Marquetta Tinsley and Mary Pelly have attempted to provide an atmosphere of good energy and great food by offering a menu of vegetarian and vegan choices. (We also offer several carnivore choices for our carnivore friends!)
The former home of The Widow's Walk Ice Creamery, Cup of Sunshine sits on the banks of the Ohio River with front-row seating not only to a beautiful Louisville skyline, but also to breath-taking western sunsets. And not to worry--if you feel the need for a sweet treat after a delicious and healthy meal with us, the Widow's Walk is still operating (seasonally) on the property. We also offer inside and outside seating and are fully wheelchair accessible.
Mary has spent the majority of her life researching and studying homeopathic health and nutrition--throwing in a boundless knowledge of home remedies. Her life's passion and Marquetta's natural "deep-southern" roots, along with her love of cooking all make for a great combination! No microwaves, no teflon, no hydrogenated oils, no refined sugars and only water purified by our self maintained reverse osmosis system in everything!
From Mary's own Sunshine Immune Support and the expertly-blended tea combinations to the healthy menu choices prepared with love and lots of good energy, we think everyday should include your very own Cup of Sunshine !
Treat your wonderful office personnel or any organizational get together to a healthy & delicious lunch & we will take off 10% of total order. Call for details.
Little things that help a bunch...
1. Join the "Green Bag Brigade". Carry your own canvass shopping totes and stop adding a billion plastic bags to the landfills everyday.
2. Help save a tree by...using cloth napkins instead of paper, tearing up old t-shirts for cleaning rags instead of using paper towels (we wash and reuse these over and over if they are not too dirty), wash a few more dishes rather than using paper plates.
Ideas & Whatnot « Result #12 on Sept 20, 2008, 5:35pm »
I was thinking about your "no lights" problem and came up with an idea to help out. But you have lights now, so perhaps you can think about doing it the next time the lights are out. (Hopefully not for a long, long time.)
I thought you could get a gas/charcoal grill and do grilled vegetable salads, grilled pizzas, grilled veggie burgers, etc. Use disposable plates, bowls, glasses since you can't wash. (Keep frig items in an iced down cooler/s. Or only grill nonperishable food items.)
And this gave me an idea for single pizzas. You could put cheese, veggies, etc. on flatbread and grill them on an electric grill/griddle/skillet, bake them, or toast them in a toaster oven.
I saw grilled pizzas on one of the cooking shows, and they looked good. They either made their own pizza dough from scratch, or they used bread dough ... and for some reason I thought of flatbread. Oh, I remember why. Those huge pizza crusts you can buy to create your own pizzas from scratch look a lot like oversized flatbread, that's what gave me that idea.

Hallelujah and let the coals die down!!
We got our home-juice at 6 PM and Jer called about the shop about 9-ish. Mare went and picked up our freezer stuff from its holiday getaway and we just got back from the shop. It's about the most beautiful sight I have ever seen--all lit up and twinkling in the moonlight!
I have lots to do yet, but I wanted to stop in and let everyone know that Cup of Sunshine is open for business again at high noon tomorrow.
We will be rescheduling the yard sale before the weather turns, just not this weekend. I think we will have enough on our plates tomorrow.
